  • 1 very fresh artichoke
  • 1 half potato
  • 2 tarragon leaves
  • 1 C. grated gruyere
  • 2 drops of lemon juice
  • a little butter


Wash the artichoke, cut its stem and leaves over half its height. Lemon the cut part. Cook it for 30 minutes steaming. After 15 minutes, add the peeled potato, diced. Peel the artichoke and keep only the bottom. Pass it to the vegetable mill with the potato and tarragon. Add Gruyère, butter and a little milk for a more fluid texture.
